Drexelbrook Catering and Corporate Events Center is very proud of our Culinary Team led by Chef Wade Harvin. One of the favorite creations here at Drexelbrook Catering is our Crab Cakes. In season we go through an average of 360 pounds of crab meat a week in the production of our Crab Cakes.
Chef Wade and the Culinary Team at Drexelbrook Catering and Banquet Facility take great pride in the recipes and food and our crab cakes have won awards at tasting competitions and regional events including recently at the NFCA event where we placed second overall for food with our gluten free version.
Here is the simple recipe for these incredible delights from Drexelbrook Catering Culinary Team
2.5 Lbs Lump Crab Meat
8 Ounce Small Diced Red Bell Pepper
8 Ounce Small Dice Onion
2 Eggs (Beaten)
1/2 tsp Fresh Ground Pepper
1Cup Mayonnaise
2 Ounce Dijon Mustard
1/4 Cup Fresh Diced Scallions
2 Cups Bread Crumbs
1. Drain excess liquid off crab meat in a colander
2. Saute red pepper and onion in 1 Tblsp oil & 1 Tblsp butter until translucent
3. In a bowl combine crab meat, red pepper, onion and eggs careful not to break up lumps
4. Add mayonnaise, mustard and black pepper
5. Add scallions and bread crumbs and gently mix.
6. Use small portion scoop to determine size you desire
7. Dip in an egg wash of milk and egg then into additional bread crumbs
8. Saute on each side until golden brown
9. Serve with your favorite sauce. We prefer a Chipotle Aioli here at Drexelbrook Catering
